จัดเลี้ยงนอกสถานที่: ข้อควรรู้ อาหารโต๊ะจีนงานแต่งให้ถูกวิธี (https://thetastefood.com/)
งานเลี้ยงอาหารในงานมงคลต่างๆ ไม่ว่าจะเป็น งานบวช หรืองานเลี้ยงสังสรรค์ต่างๆ แน่นอนว่าต้องนึกถึงการจัดงานแบบโต๊ะจีน เป็นอันดับแรกๆ โดยเฉพาะงานแต่งงาน ที่ไม่ว่าจะเป็นงานของคู่ไหนก็มักจะเลือกการจัดเลี้ยงแขกด้วยอาหารโต๊ะจีนงานแต่งงานทั้งนั้น ยิ่งเป็นคู่รักที่มีเชื้อสายจีน จะเรียกได้ว่าเป็นธรรมเนียมปฏิบัติอย่างหนึ่งเลยก็ว่าได้ในการจัดโต๊ะอาหารเลี้ยงแขกแบบโต๊ะจีน โดยแนวคิดสำคัญของชาวจีนตั้งแต่สมัยบรรพบุรุษที่ปลูกฝังกันมาว่าการนั่งรับประทานอาหารร่วมกันในโต๊ะทรงกลมทำให้มองเห็นและพูดคุยกันได้ทุกคน ไม่มีการแบ่งแยกชั้นวรรณะ และไม่เหลื่อมล้ำกันบนโต๊ะอาหาร
1. อุปกรณ์การจัดโต๊ะอาหารโต๊ะจีนงานแต่งที่ขาดไม่ได้ 6 อย่าง
การจัดโต๊ะอาหารโต๊ะจีนนั้น ในเรื่องอุปกรณ์บนโต๊ะอาหารจะต้องของทั้ง 6 อย่าง ได้แก่
1. ตะเกียบ 1 คู่ต่อ 1ท่าน ซึ่งในงานมงคลจะใช้ตะเกียบลงรักษ์สวยงาม
2. ช้อน
3. ถ้วยน้ำแกง หรือถ้วยแบ่ง
4. จาน
5. แก้วน้ำใส ซึ่งในอดีตจะใช้เป็นแก้วชา หรือแก้วเหล้ากระเบื้อง
6. ถ้วยน้ำจิ้ม โดยชาวจีนได้ชื่อว่ามีจำนวนน้ำจิ้มมากกว่าชาติอื่นๆ เนื่องจากส่วนใหญ่อาหาร แต่ละชนิดจะมีน้ำจิ้มเฉพาะของแต่ละอย่าง
2. การจัดการนั่งทานอาหารโต๊ะจีนงานแต่งงาน
การจัดตำแหน่งการนั่งรับประทานอาหารก็เป็นสิ่งสำคัญ ทั้งนี้ควรจัดให้ผู้มีความอาวุโสสูงสุดนั่งหัวโต๊ะ โดยหันหน้าออกทางประตู แล้วผู้อาวุโสรองลงมาก็นั่งทัดลงมา ส่วนเด็กเล็กที่สุดควรจัดให้นั่งใกล้กาน้ำชา หรือกาเหล้า เพื่อเป็นผู้บริการเสิร์ฟน้ำ
3. อาหารโต๊ะจีนงานแต่งต้องเป็นเลขคู่และมี 8 อย่างขึ้นไป
ในลำดับอาหารที่เสิร์ฟจะเริ่มตั้งแต่อาหารเรียกน้ำย่อย พวกออเดร์ฟเย็น อาหารจานร้อนจะต้องประกอบไปด้วยอาหารที่ปรุงด้วยเนื้อสัตว์บก, สัตว์ปีก, อาหารทะเล และผัก โดยจะมีอาหารจานหลักเป็นหูฉลาม ตามด้วยอาหารอิ่มท้อง เช่น ข้าวผัด และสุดท้ายตามด้วยด้วย ของหวาน หรือ ผลไม้
4. การจัดโต๊ะอาหารโต๊ะจีนงานแต่งห้ามนั่งเป็นเลขคี่
คนจีนเชื่อว่าการนั่งเดี่ยว หรือนั่งเป็นจำนวนคี่เป็นเรื่องอัปมงคล จึงนิยมจัดให้นั่งเป็นจำนวนคู่ ซึ่งเป็นมงคล สมบูรณ์ เข้าคู่กัน ดูกลมกลืน และการนำโต๊ะกลมมาจัดเลี้ยง โดยเชื่อว่าทรงกลมหมายถึงความสมบูรณ์ เหมือนพระจันทร์ บ่งบอกถึงว่ากลมกลืน สามัคคี รวมถึงโต๊ะกลมสามารถนั่งได้จำนวนมากขึ้นจาก 8 - 12 คน อีกด้วย
5. อาหารมงคลบนโต๊ะจีน
การจัดโต๊ะจีนนั้น จะมีอาหารมงคลอยู่ 5 อย่าง ที่มาจากธาตุทั้ง 5 ธาตุ คือ ไฟ ทอง ไม้ น้ำ ดิน โดยจะเน้นสิ่งมีชีวิต คือ หมูนำไปย่างทั้งตัว , หูฉลาม , เป็ดยัดไส้เกาหลัด , ปลานึ่ง และหอยจ๊อ ซึ่งคนจีนถือว่าการบริโภคสิ่งที่ดีมีคุณภาพจะนำพาความเจริญให้แก่ฐานะค่ะ
